

Glazed Coconut Lime Muffins
INGREDIENTS:
For The Muffins:
- 2 cups almond flour (240g)
- 1/2 cup coconut flour (56g)
- 1 tsp baking soda
- 1.5 tsp baking powder
- 1/4 cup coconut oil, melted (60ml)
- 1/4 cup coconut cream (60ml)
- 4 eggs, whisked
- 1/4 cup erythritol (50g)
- 3 tbsp lime juice (45ml)
- Zest from 2 limes
For The Glaze:
- 2 tbsp coconut cream (30ml)
- 1 tbsp lime juice (15ml)
- 1 tbsp erythritol (12g)
INSTRUCTIONS:
- Preheat oven to 350 F (175 C).
- Combine all the muffin ingredients. Mix well.
- Line a muffin pan with muffin liners or grease well.
- Spoon the mixture into the 3x4 muffin pan (to around 3/4 full) and level out with a spoon.
- Bake for 15 minutes until a toothpick comes out clean when you insert it into a muffin.
- To make the glaze, mix all the glaze ingredients together. Drizzle or spread over the cooled muffins.
